Happy Heart Citrus Cookies

What a spring we have had! Just this past weekend here in Michigan we had a ice storm, a snow day, and we are all scratching our heads thinking is this April or January?!? Personally, I kinda expect this kind of spring torture here in Michigan, but I have to admit this year has really got me going crazy with antsiness and low-grade depression! Let's get on with this weather and let's start to see the warmth, buds, flowers and green grass, already!!!
It efforts to bring a little more warmth and love into our homes this season I made some Happy Heart Cookies with the hint of lemon and orange to help uplift our spirits and perhaps remind our hearts of happiness, love, joy and the gifts of life all around us. These little cookies are a symbol of that. They are just a cookie, yes, but they also represent love and those citrus flavors have a reputation for uplifting the senses and heart to inspire. So we need all of the uplifting, and love and happiness we can get around these parts! So my friends, may you find love and peace in your day and carry on and spread it as best as you can! Happy Heart Citrus Cookie Recipe
{gluten, dairy, egg, soy, nut, seed and refined-sugar free}

3/4 cup of certified gluten-free oat flour (+ 1 more cup for kneading and rolling out)
(I grind my own out of GF rolled oats)
3/4 cup of fresh ground buckwheat four
3/4 cup of rice flour
3/4 cup of tapioca flour
1/3 cup of coconut palm sugar
2 TB of potato starch
1 1/2 ts. of baking soda
1 ts. of sea salt
1 ts. baking powder
1 organic lemon for zest and juice
1 organic orange for 3-TB of fresh zest and 1/2 cup of fresh juice
1 TB of apple cider vinegar
1/4 cup of maple syrup
1/4 cup of pure honey
1 cup of oil: I use a mix of coconut oil and palm oil shortening
1/2 cup of date paste puree

plus 1/4-1/3 cup of sparkling sugar with 1/2 ts. of lemon flavoring oil or 1 ts. lemon juice

In a large bowl, mix together the flours and dry ingredients first, then add in the wet and oils, use a spatula to make sure the oils are evenly pressed through and the batter is soft.  You will need to add about ONE MORE CUP of GF oat flour for kneading, firming up and rolling out.

Let batter sit in the fridge to firm up just a bit, like 15 minutes. Then roll out and cut out the cookies with your favorite heart shaped cutters.  Sprinkle the lemon sparkling suagrs on top of the hearts before baking. You may need to press the suagrs into the cookies justa  bit.

Bake in a 350 degree oven for 15 minutes, until golden brown on the bottom. Let cool for at least 20 minutes from the oven before moving to help with less breakage.

Chocolate Muffins

It's a Monday. Sometimes Monday's call for muffins, and even more so, some Mondays call for chocolate muffins. Yes!  These are the kind of muffins that will get you out of bed and on your way. They won't let you linger, or press snooze ONE.MORE.TIME. or even have you wish this day never came. It won't be just another manic Monday if you can start it with one of these babies. They will have you ready to face the hard stuff, one step at a time.
And not to mention with a serving of pumpkin, dates and banana hidden in there beneath the energizing cocoa these really are FULL of GOODNESS too. You can nourish yourself with the good stuff and also have fun doing it! Some days call for the big guys to come out and help you through, and if you got some of these sweet muffins on your side I know you can do this. You were born for this. Don't give up on being you and doing what you know best. We all need you and you are the best person for the job. Happy baking and happy Monday, friends!!!
Chocolate Muffin Recipe
{gluten, dairy, egg, nut, seed, soy and refined-sugars-free}

1 1/2 cup of freshly ground certified gluten-free oat flour
(or use buckwheat flour as a replacement)
3/4 cup of white rice flour
1/2 cup of tapioca flour
1/2 cup of cocoa powder
1/2 cup of coconut sugar
2 ts. of baking powder
1 ts. of baking soda
1 ts. of sea salt
optional: add in a drizzle of vanilla
1/2 cup of pumpkin puree
1/2 cup of date puree
heaping 1/2 cup of mashed banana
1/2 cup of coconut milk beverage
1/4 cup of apple cider vinegar
1/4 cup of maple syrup
1/4 cup of avocado oil
1/4 cup of coconut oil

1/2 cup of dairy-free choclate chips to sprinkle on top before baking

In a large mixing bowl, mix in all the dry ingredients together first, then add in the wet and mix together well. Until you get a smooth and creamy chocolately mixture. Then use a 1/3 measuring cup already greased with avocado/coconut oil and measure out heaping 1/3 cup muffins into muffin parchments. This recipe should make about 12-16 muffins depending on your heaps. Top muffins with extra dairy-free chocolate chips to make it real special and then bake in a 350 degree oven for 22-25 minutes or until they are stiff and no gooey middles. Let cool for 15-20 minutes before you serve. 

Then grab your favorite cupa-hot-something and ENJOY your morning...your day... and all of it...because these will get you on the right step in all the right!

Banana Bread Tea Cake

When it's February in Michigan, the snow isn't as magical as it once was. It tends to feel very cold and possibly an inconvenience with the unending shovelling and driving slow and careful. And, you start to hear more and more complaining ;) and more and more cases of seasonal sadness taking over lives, begging for sunshine and warm to come just a bit early this year. I think maybe our dreams were dashed when that silly groundhog saw his shadow... I guess saying we have 6 more weeks of winter??  I could have told you that ;) Or at least here in Michigan we have [at least] another 6-10 weeks of winter conditions!

Or is it because we are trying to rush through to the next thing...ALWAYS! It is hard to sit and be in the place where you are. Just being means you have to slow down and pay attention. Being. Mindful. Take it all in. The smells, tastes, feelings, and sounds... And it doesn't hurt to have a few winter activities to find cozy comfort and stay grounded in the present.

Like, have you gone out on a winter hike? Yes you have to get bundled up, but I swear to you that it will change your whole heart when it comes to winter. It is quiet...sacred...simple.. and magical. It will remind you of the present beauty that is all around you and begging you to see and be.

Or the winter sunrises and sunsets. They are what get me up each day and keep me going. The pinks, reds and orangey-peach that fills the sky is breathtaking! Like witnessing a miracle each day!
Baking bread is another one of those activities that brings me warmth and joy in the winter months. I don't care as much about getting warm next to the oven in the summer months. In fact I would likely LOVE to not put the oven on and stay outside in the sun at the beach! But in the winter months you can truly enjoy and savor the space to enjoy baking. And that's why this bread came into creation. One of those days sitting and taking in all the winter-goodness and sacred space. If you are looking to bring a little more warmth and joy to your life these last few weeks [months!] of winter I suggest finding a few activities that bring you life, hope, joy and soaking in them.  Banana Bread Tea Cake Recipe
{gluten, dairy, egg, soy, seed, nut and refined-sugar-free}

3/4 cup of fresh ground buckwheat flour
3/4 cup of fresh ground GF oat flour
3/4 cup of rice flour
1/4 cup of tapioca flour
1/4 cup of potato starch
1/4 cup of coconut flour
2 ts. of baking powder
1 ts. of baking soda
1 ts. of sea salt

1/2 cup of oil [avocado, light olive, or softened coconut]
3 mashed bananas [1 cup]
2/3 cup of coconut milk beverage or other plant-milk
1/3 cup of apple cider vinegar or lemon juice
1/4 cup of applesauce
3/4 cup of date puree paste

In a large mixing bowl, whisk all the dry ingredients together first. Then add in the wet and oil and mix together well.  Then oil a baking 9x13 pan or a cake pan or a bundt. Pour in the batter and bake in a 350 degree oven for 40-45 minutes for the bundt, or 30ish for the 9x13 sheet cake pan. Check with toothpick to see if middle is set and not gooey. Let cool and serve up with warm butter or jams of choice. 

I hope you find the sacred in the every day, everything is connected and spiritual and as it should be. Soak it in, enjoy it's season and the parts that are painful or challenging- hold onto them and move through them- they can be your teacher and make you who you need to be!

LOVE Brownies

I had the joy and honor to cook for another Women's Wellness Retreat this past weekend. It was another group of fabulous women with such bravery to dig deeper into the inner self for healing, rest, nourishment and self-love. After these experiences, I again remember how I truly believe that women are the force of change and love in the world. They are the ones that are willing to go through the wounds, the pain, and the joys that make us who we are... and then somehow turn that power into superpowers to share with those around them. It's pure magic and amazement to see this beauty unfold!

I make many of my most favorite recipes...my Sweet Potato Lentil Chili, homemade bread, covered in honey butter and berry chia seed jam. And I had to share some of my newest favorite ways to start the day with the warm smoothie or immunity shots. And then there is cookies, and muffins, and so much more...(hot cocoa and marshmallows...) It is so fun...and exhausting in a good way. This time by the end of the retreat I wanted to use up some of the leftover ingredients and I whipped up a pan of brownies to send our guests home with. These brownies were born out of LOVE and leftovers :) And of course they were magic in a pan :)
Love 'Leftover' Brownie Recipe
{gluten, dairy, soy and nut-free}

1/2 cup of GF oat flour
or a mix of a GF flour blend (millet, buckwheat, quinoa, rice)
1/3 cup of cocoa powder (or hot cocoa mix)
1 TB of coconut flour
1 TB of potato starch
1 TB of tapioca flour
1 ts. of baking soda
1/4 ts. of baking powder
1/2 ts. of sea salt

1/4 cup of pumpkin puree
1/4 cup of date puree
2 whipped-up fresh eggs
(you can omit eggs and add in more pumpkin puree or use chia 'eggs')
3/4 cup of coconut palm sugar
1/4 cup of maple syrup
drizzle of pure vanilla

In a saucepan, melt the following together to add to the batter...
1 cup of chocolate chips
1/2 cup of melted coconut oil

optional: sprinkle more chocolate chips in and on top before baking (another 1/3-1/2 cup)
OR if you are nut/seed person you could add some walnut or pecans to the batter here too

In a large mixing bowl, mix together all the dry ingredients and then the wet, finally folding in the melted oil and chocolate chips. Fold all together and then you can add more chocolate chips to the batter or to the top before baking. Spread in a parchment papered  9x9 tin or glass pan to make it easier to pull the brownies out to cut. Spread evenly in the pan and then you can bake in a 350 degree oven for 22-25 minutes. Pull out and let cool for at least 30 minutes before cutting squares to help with less crumbles. 

This recipe will fit into a 9x9 baking pan, or double the recipe up and pour into a 12x15 baking sheet pan. I originally made this recipe doubled and then made it again halved for my own family.

After cutting out squares you can ENJOY just as they are with so much gratitude and LOVE for good deep rich brownies made with wholesome ingredients and ones that you can share :)

Banana Cream Panna Cotta

After eating no sweet treats for the last week, I was getting desperate for a little something and my kids were begging for banana pudding. So then this little treat was created. I wasn't sure what to call it but here it is... A thick creamy custard-type gelatin treat, BUT no sugar and sweetened only with fruit. So my friends, this is ONE special dessert ;)
 
I just love a thick, have to use your spoon, kinda dessert. It's one you might want to lick the jar clean but won't, so you pretend your spoon is your tongue and you try and get every last bit. The cute jars help with savoring each lovely bite too, and you can't help but wish there was another secret compartment on the bottom somewhere. 
But what makes this dessert sweet and worth every bite, is the date puree and the fresh vanilla bean- both with such rich deep flavor- oh and the banana. Which I have found is one of those foods and flavors that people either LOVE or HATE- there is no middle ground on it. I happen to love banana, but some can only imagine baby food. So maybe this recipe is not for you, but if you are a banana pudding or everything LOVER- then this is a must try! Hope you ENJOY!
Banana Cream Panna Cotta Recipe
{gluten, dairy, egg, nut, seed, soy and sugar-free}

2 ripe bananas smashed and pureed
1/2 cup of date paste puree 
1 can of full-fat coconut milk
1/2 vanilla bean scraped for the beans (or use 1 TB of vanilla extract)
1/2 lime squeezed or 1 TB of juice
a pinch of finely grated fresh ginger
pinch of sea salt
pinch of ground turmeric

Put all of the above ingredients in a small saucepan to get warm on low heat. Warm till it is steaming but not boiling or bubbling. Then, in a separate small bowl, mix up the following to let the gelatin bloom...

1/2 cup of coconut milk beverage
1 1/2 TB of pure gelatin 

When the gelatin stiffens, scrap into the saucepan with the rest of the ingredients and turn off heat completely. Then whisk in the gelatin so it is one mixture and pour into a blender and blend until frothy and mixed well and then slowly pour into 1/2 pint glass jars, or even in the smaller size meant for small jams (the 1/2 cup size... called 1/4 pint maybe?). Then put on lids and slide into the fridge for 3-4 hours and then you are ready to eat and ENJOY!

If you are not a banana fan you can add in 1 cup of pumpkin puree in it's place or just leave it as vanilla coconut. I will save those recipes for another post ;)

I hope you give this ONLY fruit sweetened dessert a try! It totally hits the spot when you haven't been enjoying many deserts ;) It is a new favorite around my house and I know Ill be making many more varieties as the month goes on...

Peppermint Crunch Fudge

Are you a fudge lover? Peppermint lover? How about a combo for another Christmas cookie treat? I made this freezer fudge this summer and fell in love with an easy simple, not-too-much goodness, treat that you could make last minute or have for days. This one has a Christmas peppermint twist with some added candy cane goodness. Fudge isn't really photogenic if you ask me, or maybe were all just too excited to consume it so it doesn't last long enough to snap a photo, haha! 
But there is a lot more there on these ones than what a picture can show. Maybe if it was scratch and sniff you would get the real idea here :) Oh I will stop! Just do yourself a favor and make some and share some with all the Christmas cookie goodies this year!
Peppermint Crunch Freezer Fudge Recipe
{gluten, grain, dairy, egg, soy, nut, and seed-free, also vegan and paleo}

1 - 1 1/2 cup of date paste puree
1/2 cup of cacao or cocoa powder
1/2 cup of mini chocolate chips (Enjoy Life brand)
1/3 cup of organic virgin coconut oil
1/4 cup of maple syrup
1/2 ts. of quality sea salt
1 heaping teaspoon of all natural peppermint oil flavoring

optional add in: add in 1/2-1 cup of rice cereal to add some texture, or else you can keep that out and only add the crushed candy canes to the fudge mix and topping...

(2)- all natural peppermint candy canes crushed into extra small pieces for twirling and topping.

Put all of the above ingredients, (except peppermint and optional cereal) in a small saucepan and melt and whisk together. Then lastly add in the peppermint oil flavoring and taste to make sure you don't want more. Then if you want to add in 1/2-1 cup of rice crunch cereal and quickly pour into a parchment covered 9x9 pan or a 8x10 pan and spread smooth. Lastly mix or top the crushes candy canes before you put in the freezer to get hard. Put in the freezer for 2 hours and then cut into 2x2 squares. Keep in the fridge or freezer to stay fresh longer.

Berry Chia Jam Thumbprint Cookies

This is one feels like tradition to make around Christmas time. It must be because I grew up around an old family version with lots of butter and even cream cheese, but this one is allergy safe with no eggs, dairy or gluten, even can be without nuts or seeds too! I love how it is still soft and crispy and buttery and melts in your mouth. This version also uses my most favorite homemade jam- made with bluberries and chia seeds. It is just the perfect bite-sized piece of wonderfulness! The added sprinkling of powdered sugar matches the powdery stuff falling from the sky today. Warm, cozy and magical is the mood- these are a must to add to the holiday cookie platter- I promise!

Berry Chia Jam Thumbprint Cookie Recipe
{gluten, dairy, egg, soy, nut and seed-free options}

1 1/4 cup of finely ground gluten-free oat flour
3/4 cup of finely ground buckwheat flour
1 cup of white rice flour
1/2 cup of tapioca flour
2 TB of potato starch
1/2 cup of coconut palm sugar
1/2 ts. of baking powder
1 ts. of sea salt
1 ts. of baking soda
1 TB of apple cider vinegar
2 TB of maple syrup
1/2 cup of date paste puree

1 cup of oil: do a mix of either 1/2 cup coconut oil and palm oil shortening OR you could sub in 1/2 cup of your favorite nut or seed butter for the palm oil shortening. It adds a beloved flavor combo of PB and J kinda-touch.

I first blend up my own flours for the GF oats and buckwheat. Then in a large mixing bowl, add in all the dry ingredients first. Mix together well and then add in the wet and room temperature oils. Use a spatula to mix well, or your hands usually do the best trick at mixing equally. You want it to be soft but also all together so you can roll it into balls. It should leave a little oil to the touch on the hands. That is what makes it melt-in-your-mouth- buttery kind of texture too!

Once smoothly mixed, roll into a large ball and put in the fridge for 20 minutes to stiffen up Then pull out and roll large 1 TB-sized balls between your hands to make about 2 dozen cookie balls. Put onto a parchment covered baking sheet and then press your thumb firmly and evenly into each cookie ball. This will leave you a space to pour your jam into. Once 1 large spoonful of jam is entered into the thumb print space on the cookie- bake in a 350 degree oven for 12 minutes. Until golden and bottoms are browned- do not touch or move for another 15-20 minutes to help them from crumbling!
I used my favorite homemade berry jam as follows. If you want to make the full batch and have some more for bread and toast then YES make the full batch, but if you are looking to just make some for these cookies, half or cut the recipe by 2/3's so that you make 1/3 amount to top the cookies :) Here is the recipe for your enjoyment ;)

Immunity Boosting Berry Chia Jam Recipe

2 cups of frozen blueberries
2 cups of frozen cranberries or raspberries
2 cups of frozen strawberries
1 cup of very concentrated elderberry tea*
1/2 cup of juice (I used Antioxidant Force by Smart Juice) but you could use pomegranate or other no sugar fruit juice like cherry, berry mix, or grape. Or at the least you could use water as well.
2 TB of grated fresh ginger
1 organic orange grated for zest and squeezed for juice (could easily sub a lemon)
1/3 cup of pure raw honey
drizzle of maple syrup (or add 1/4 cup more of honey)
pinch of sea salt
pinch to 1 ts. of pumpkin pie spice blend
1/2 cup of whole chia seeds

*Soak 1/2 cup of dried elderberries in 1 quart jar of boiling water and let sit for overnight or longer and then drain the berries out and you have elderberry tea. You could also sub in some already made elderberry syrup if you used up your berries already making that and have it on hand- but you would only use 1/2 cup of the elderberry syrup and add 1/2 cup water. And since the honey is in the syrup as well you may decide to not add as much honey in the rest of the recipe. 

In a medium saucepan, pour in the 6 cups of frozen berries with the tea and the juice and let cook to defrost and get soft. Then add in the ginger and orange juice and zest and bring to a soft boil and bubble and cook from any where to 10-15 minutes until the berries are very hot, juicy and mushy. Then use an immersion blender to blend in half of the mixture to be more smooth and have less chunky fruit. After this it looks like a fruit soup. Then add in the honey and syrup and stir well while it softly bubbles and boils. Turn off the heat and then add in the chia seeds. Stir in well so not to be clumpy and then let it sit in the pan and cool and let the chia seeds soak up the moisture and turn into a thick jammy substance. When it cools for 10-15 minutes you can pour into jars to continue to cool and thicken in the fridge. This recipe makes 3 pint jars. You can half it if you are looking to make less or you can also freeze and then thaw out when needed.

Cranberry Orange Shortbread Cookies

The past few Decembers, (8!) but who's counting ;) I have been blogging recipes about gluten and dairy-free Christmas cookies. And this month is no different- it's like once the Christmas tree is up and the snow starts falling all that I want to do is bake Christmas cookies and read stories by the hue of the magical lights. And these are just about the best of the best for that...
These perfect little cookies were born by chance at finding these lovely already diced and minced dried cranberries at my local market and at first sight it was love. I already dreamt up these cookies in my mind before I checked out of the store! I was thinking they would be the perfect flavors and colors for a Christmas cut-out cookie and goodness gracious- the result proved to be fabulous!

And then... I added some melted chocolate to some of them... whoa whoa whoa! Now the cookies are good and I feel like I could eat them with tea at just about any time of the day, but when you add that orange flavor infused chocolate- now that just feels fancy! A dessert really. Can a cookie be a dessert? Definitely at Christmas time ;) 
But mostly, I just love making the cookies, the varieties, the traditions, the flavors, the colors. It is all just magical and joyous! We have been talking alot about hope and joy at our house the past few weeks, and the kids and I agreed- that making Christmas cookies is one of the best ways to have and share the Christmas joy with others. I love teaching my littles that the beauty of Christmas is actually in the hope, joy, peace and love that we share. That is actually where the magic is, and these cookies are just a picture of that love that we share, and enjoy and give away. So... Cranberry Orange Shortbread Cookie Recipe

(PLUS ONE MORE CUP of GF oat flour added at the end for firming up and rolling out)
and 1 cup of finely chopped dried cranberries (you can use or more or less for preference!)

Roll all together and let sit in the fridge to firm up just a bit, like 15 minutes. Then roll out and cut out the cookies with your favorite cutters. Bake in a 350 degree oven for 15-18 minutes, until golden brown on the bottom. Let cool for at least 20 minutes from the oven before moving to help with less breakage.

They are also fun to use the cut-out cutters, but you could easily spread this batter out with a rolling pin in a 12x15 pan and pre-slice 3x3 or 3x2 cookie squares before baking for about 20-30 minutes at 350.  They are a play on Scottish or Irish shortbread squares. They would look a bit more simple, but the flavors and red popping out would make them just as wonderful. I might have tried that first if it wasn't December- and when I have little ones that want to use the Christmas shapes all day every day, you appease them.
You could also top with some melted chocolate that is infused with some orange flavoring, or some sweet orange essential oil that is made to eat. I melted 1 cup of bittersweet chocolate in a bowl over a pan of boiling water and then dropped a few drops of orange flavoring in it. It only amplifies the orange flavors! One of the most classic flavor combos- chocolate and orange- I can't resist!
You can use a special frosting pouch and decorator if you want to get even and fancy lines on the cookies, or you can do a rustic job as I did this go around and trace the shapes and fill in the middles. Once the chocolate dries- it will be stiff and hard like a chocolate bar. 


End result is fabulous! I love a little bitter sweet chocolate with a chewy cranberry crunch all smothered in a citrusy orange infusion! These cookies are also easy to make ahead of Christmas and freeze and pull out here and there for parties and gatherings. That is if you really want to make and wait to eat them ;) They are so yummy you will find yourself going back for more and then thinking about them in January when you decided to tighten up the sweets and goodies in your life ;)

Cardamon Pear Muffins with Cranberry Sauce

December! The Christmas tree is up. The twinkle lights are shining magic from room to room. The sun goes down at like 4:30pm...but right now, we don't care because the Christmas lights and magic is in full force. And it hasn't snowed here yet, so we are still anticipating that magic, but to help us get in the Christmas spirit the kids and I were making our baking treats list. Which for sure included cut-out sugar cookies and fudge and sprinkles and candy canes... ok I think the kids were more excited about all the other Christmas treats and I was thinking about the baking :) No surprise here!
These muffins are the perfect combo of moist, spice and texture. They are good for the soul. Yes, maybe I talk too much about how food can nourish you, or even how food can do more than just feed the stomach. But these little muffins remind me of just that. They bring joy and cheer. They bring hope and peace. They are just little muffins, yes, but they touch all of the senses when you mindfully surround yourself into the baking process. Each ingredient is added in love and opens your senses to the warmth, spice and delicious flavors of the season.
And... these little beauties can use up some of that leftover Thanksgiving cranberry sauce (if you still got it), and start the magical month out with a little special muffin baked with amazing cardamon and pear. The scents will fill the kitchen and will have you all warm and fuzzy from joy!
Homemade Cranberry Sauce
{gluten, dairy, egg, soy, seed, nut and refined-sugar-free}

16 ounces of fresh raw cranberries (I use organic if I can find them in Michigan)
1/2 cup of water
1 organic navel orange for 2 TB of fresh zest
plus 1/2 cup of fresh squeezed juice

Put all of the above in a small/medium saucepan, let the water and juices come up to a boil and POP the cranberries from their skins. This will take anywhere from 5-10 minutes. Then let them cook down just a bit and swirl in some honey and a pinch of salt

pinch of sea salt
1/3- 1/2 cup of honey or maple syrup

After cooking for 15-20 minutes, the liquids will cook down and the sauce will be ready to dish into a glass jar or bowl. Cover well and let it cool down and "set" in the fridge. After a few hours you will see that it naturally almost gels a bit and is the perfect sauce to top on just about everything ;) 

Cardamom Pear Muffin Recipe with Cranberry Sauce
{gluten, dairy, egg, seed, nut and refined-sugar-free}

1 1/4 cup of ground GF oat flour
1/3 cup of white rice flour
1/3 cup tapioca flour
1/4 cup of potato starch
1/4 cup of coconut flour
1/2 cup of coconut palm sugar
1 ts. of baking soda
1 ts. of sea salt
2 ts. of baking powder (I use Hain brand for corn-free)
1 TB of ground cardamom
pinch of ground cinnamon

3/4 cup of date puree- This involves pouring 3/4 cup boiling water over 3/4 cup of pitted dates and letting it sit for 5-10 minutes and then blending in a high powered blender to whip up a creamy date-pudding like substance

1/4 cup of unsweetened applesauce
1/2 cup of coconut milk beverage (or other non-dairy milk)
with 1 TB of apple cider vinegar
1 TB fresh lemon or orange juice
1/4 cup of maple syrup

2 small fresh pears finely diced and stewed in a saucepan until soft and reduced with a drizzle of water and maple syrup (about 1/4 cup of each) Makes about 1 cup of  stewed pears for muffins

Add in 1/2 cup or so of leftover cranberry sauce and use a tablespoon to spread some on top before baking.

Mix all the dry ingredients together in a large mixing bowl. Then add in the wet and whisk together well. Pour into 12 muffin tins, fill about 3/4 the way for a full muffin. Then spread some of the cranberry sauce (about 1 TB) on top and swirl around before baking. 
Bake in a 350 degree oven for 25-28 minutes until stiff. Wiggle and check the middles to make sure there is no jiggle. Then let cool 5-10 minutes before serving. Store in a cool dry place to last longer.

Pumpkin Spice Waffles

Time for a little pre-Thanksgiving treat! I think this year we might start with the pumpkin pie for breakfast or maybe perhaps these pumpkin waffles. Maybe then we can really enjoy them instead of being too full of other goodness. Thanksgiving is not all about the food, yes?!? But so many times it feels that way since it is the focus point of the holiday. But truly, when we have all of our stresses taken away from what the menu is and what the plans are, maybe we can enjoy the simplicity of family and loved ones being together. Slowing down. Saying thanks. Living with amazement and gratitude for the gifts of life and cherishing the memories we can make together.
That is what Thanksgiving we are focusing on this year. Yes, the food. But more so, the time together. We have all had a busy and crazy year in so many ways, but this season begs us to slow down, say thanks and live fully present into our peoples lives. I hope this for you, I hope this for me. And sometimes making waffles and making lattes, is just the way to do it! So I share yet another pumpkin recipe as we gather and slow down and nestle into this holiday week.
Pumpkin Spice Waffles Recipe
{gluten, dairy, soy, nuts, seeds, eggs, refined-sugar-free}

1/3 cup of coconut flour
1/3 cup of potato starch
1/3 cup tapioca flour
1/2 cup of rice flour
1 1/2 cup of gluten free oat flour (I grind my own out of GF rolled oats)
2 ts. of baking powder (Hain brand-corn free)
1 ts. of baking soda
1 ts. of sea salt
2 ts. of pumpkin pie spice (or mix up cinnamon, ginger, nutmeg and cloves)
1/2 cup of coconut palm sugar

1/2 cup of date puree
1/4 cup of pure maple syrup
3/4 cup of coconut milk beverage with 3 TB apple cider vinegar
2/3 cup of pumpkin puree (fresh or canned)
1/3 cup of melted coconut oil or avocado oil
optional addition: 1 ts. of pure vanilla extract

Mix all the dry ingredients together in a large mixing bowl. Then add in the wet and whisk together well. Let the batter sit and stiffen up while the baking powder ignites. Use an oiled 1/3 or 1/2 cup measuring cup to dish out enough batter to pour onto the waffle skillet. I have used this one before...

Then I use my waffle iron according to it's instructions and then even cook for a bit longer than that to get the crispiness we desire. Because this recipe is vegan and has no eggs it can tend to be a bit soft (or soggy) if you do not cook long enough. So its about a 3-4 minute cook time on my iron- but that might be different on yours.  This recipe makes about 6-8 waffles or 12 pancakes. When I make them, we usually eat half and have the rest in the fridge ready to toast up for the rest of the week- so a great leftover!!! Make a big batch and stick them in the freezer ready to go! 
Top with a dollup of maple syrup, coconut cream whip, a pinch of spice, or dried or fresh fruit or whatever your thanksgiving-pumpkin-loving-heart desires!

Pumpkin Pie Porridge

Last pumpkin recipe for October. How did we get to Halloween so quickly?!? The month just flew by and here we are at November already! Just one last recipe I whipped up. The last few weeks of waking up to cold mornings of darkness, twinkle lights and a HOT cup of chia tea to get me moving. Oh and the porridge! This is my breakfast of choice over the cold dreary months of winter. But I'll be honest- I LOVE the cold cozy mornings full of a pot of porridge, hot beverages, thick comfy socks and snuggling of course. This porridge is comforting and warm because, yes, it is thick and warm, but also all those spices and pumpkins and dates... it's like they say, "it warms the bones!" I hope you give this one a try and ENJOY!
Pumpkin Pie Porridge Recipe
{free of gluten, dairy, eggs, nuts, seeds, sugar and soy}

First- make a blend of the ground grains to keep in the pantry for a quick breakfast...

I put in 1/2-1 cup of both: quinoa and buckwheat groats... put in a high powered blender {vitamix, ninja, ect...} Blend on high until you get a powdery flour mix of the mixed buckwheat and quinoa. You can also add in some millet seeds as a good combo as well...

Also, you may need to make some date puree- I have been keeping some in the fridge ready-made to use in recipes such as this... So you soak 1 cup of dates with 1 cup of boiling water and can do more or less of portions depending on how you want to store it. Soak in boiling water for 10 minutes (or could overnight as well). Then blend in a high powered blender and you get a pudding-like creamy date puree.

for one-serving, but you can easily double or triple...

1/4 cup of finely ground quinoa and buckwheat groats mixture
1/2 cup of pure water
1/2 cup of date puree
1/2 cup of pumpkin puree
1 ts of pumpkin pie spice
pinch of sea salt

Amounts listed above are there as a guide! So give it a try and add more or less of the pumpkin or dates. If you take away those in some amounts, you will need a bit more water. Every time I make this I usually double or triple for me and my family so the above is the best estimate of making it a single serving

Put all the ingredients in a saucepan and whisk continually until it comes to a boil and is bubbling and it thickens up quite nicely. It should be a thick creamy substance in about 5 minutes. You want to make sure and NOT leave this on the stove after you whisk together for the first time. This will leave it clumpy and sticking to the bottom. Just whisk together continually and fast for 5 minutes and you will have the best porridge around!

Top with butter, vegan butter, ghee, coconut oil and sprinkle with more spice, raisins, stewed apples, or whatever nuts, seeds, or dried fruits you desire. I also like a drizzle of jam, yogurt and maple syrup to finish off a bowl too. So creamy and the TEXTURE IS DIVINE! 

p.s. the pictured porridge actually had some rice grits added in too ;) That is those little chunks- but some days I make this by habit or dump whatever I got ready to use. So once you start to find how you like your porridge- you will have little tricks and habits too ;)

Apple Spice Crisp Cups

These cuties are ready to eat! Perfect for a fall picnic in the park, school lunches, or just for fun with your friends :) This is basically just another apple crisp recipe, and yes, I could make these in my sleep. But I did add a few different steps and pieces to this one. I also have an alternative option for those of you that want a dessert and still want to eat ONLY fruit as sweeteners, and no maple syrup, honey, coconut sugars. Dates are the perfect sub to just lightly sweeten and moisten the crumble topping and apples just right. Maybe it's because dates taste like caramel to me- and you can't go wrong with apples and caramel ;)
The apples are soft and melty and the crumble is crisp and chewy- the perfect textures and spices to warm your weary evolving soul. The steadfast love for apple crisp never wavers when you can come to this delightful treat again and again and it is always warming and comforting. It doesn't disappoint! It may be predictable and stable- but we all need that to come back to amidst seasons of change.
How perfect that apple season happens to be the season of change and watching the worlds around us die off, nestle in, and go inward. When change is happening it might feel like the world is out of control and there is no more safe spots to land. Until you ground yourself in the earth and the gifts it brings- it seems pretty simple. Pick apples, they are a steady companion. Make applesauce, save for your future months. Make some crisp or pie, and remember who you are and the predictability will bring you back home again. And share, you can never be too lost when you have your people to connect to and share with. So I share yet another crisp recipe with you- I hope you find the space this season to go inward and nestle in- I hope you make crisp and ENJOY!
Apple Spice Crisp Cups Recipe
{gluten, dairy, egg, nut, seed, soy and refined-sugar-free}
Recipe makes 12 jars of crisp or 1 pan

4-5 heaping cups of peeled and finely chopped apples
(use a variety for flavor)
1/2 cup of pure apple cider
1/2 cup of date paste puree*
1/2 cup of applesauce
1/4 cup of maple syrup
1 TB of tapioca starch
pinch of sea salt
2 ts. of ground cinnamon
1 ts. of ground nutmeg
1/2 ts. of ground cloves
1/2 ts. of allspice

*cover 1 cup of pitted dates with 1 cup of boiling water and let soak, and then puree to get a thick and creamy date paste to spread, dip, save and bake with. Once you start- you can't stop! I'm sorry!

Add all of the above ingredients in a saucepan and mix and cook down until they are softer, thickened with the tapioca, and look like an apple pie filling. Turn off the heat and let cool just a bit. Then use a 1/3-1/2 cup scoop and pour into 1/2 pint jars 1/2 way. Or if you are making a pan instead of cups you can just pour the apple mixture into a 9x9 pan. This recipe will make 12 1/2 PINT JARS or 1 9x9 or you could spread it out in a 9x13 pan as well.

Then you are ready to mix up and top with the oat topping...



topping:
1 1/2 cup quick cooking GF certified oats
1/3 cup of tapioca starch
1/3 cup of rice flour
1/3 cup of potato starch
pinch of sea salt
1/2 cup of coconut oil, palm oil shortening, or a mix of both
1/3 cup of maple syrup
2/3 cup of coconut palm sugar

option#2:
add in 1 cup of date puree paste in place of the coconut sugar and maple syrup in the topping and more date paste in place of the maple syrup in the apple mixture for an only sweetened with fruit option

option#3: You can add in 1/2 of nuts (pecans, almonds or hazelnuts) and sub some of the coconut oil with a nut-butter like almond butter or others...

Mix all of the above ingredients in a smaller bowl, and use your fingers to crumble together and then sprinkle over the apple mixtures in the cups or in the pan. 

If you are making the cups, you will want to put a piece of parchment on a baking pan with 6 cups on each pan. This will help if there is any spilling over to catch on the sheet rather on the bottom of your oven. Bake in a 350 degree oven for 35-45 minutes until golden brown, crispy, and apples are bubbling. Serve warm, just as they are or with a topping of your favorite ice cream. 

These cups are so cute, magical and I must say- SUPER FUN for leftovers, school lunches, picnics, and pretty much the most wonderful food on the go :)

I know you can make these with other fruit varieties as well, I'm sure a favorite would be blueberry too :) But since we are in apple season- I started with apples :)

Cacao Pumpkin Spice Muffins

Another happy clappy fall pumpkin muffin over here! This one is my newest favorite (don't I say that every time?!? haha!). It is hearty, rich, flavorful, crunchy and moist in all the right places. It feels like it could be breakfast, or maybe dessert, and nourishing all at the same time. The pumpkin flavor still finds it's place among the deep flavors of cacao, molasses and even the pumpkin seeds. They are chocolatey, but not too much, and besides ALL that, aren't they beautiful!?!?
I wanted to call these "superfood" pumpkin muffins because that's just what I thought of when I made these up with raw cacao powder (the good stuff!) and these crunchy yummy pepitas (raw green pumpkin seeds).  You could add in a few goji berries to the mix and it might just be like my favorite trail mix combo of all time.
If you are looking for a little weekend adventure- give these muffins a try! I made a batch a few days ago, and I'm guessing you could find me in the kitchen again today making another batch. These fall days have been glorious- full of leaves falling and piles, apple and pumpkin picking, and the most perfect of fall nature walks. Cacao Pumpkin Spice Muffin Recipe
{gluten, dairy, soy, nuts, seeds, eggs, refined-sugar-free}

1/3 cup of coconut flour
1/3 cup of potato starch
1/3 cup tapioca flour
1/3 cup of rice flour
1 cup of gluten free oat flour (I grind my own out of GF rolled oats)
2 ts. of baking powder (Hain brand-corn free)
1 ts. of baking soda
1 ts. of sea salt
1 1/2 ts. of pumpkin pie spice mix
1/2 cup of coconut palm sugar
1/2 cup of cacao powder (regular baking cocoa powder works too)
1/2 cup of date puree
1/4 cup of molasses
1/3 cup of pure maple syrup
1/3 cup of coconut milk beverage with 1 TB apple cider vinegar
3/4 cup of pumpkin puree (fresh or canned)
1/2 cup of melted coconut oil

1/4 cup of raw pumpkin seeds (pepitas)
1/4 cup of Enjoy Life's mini chocolate chips


Mix all the dry ingredients together in a large mixing bowl. Then add in the wet and whisk together well. Let the batter sit and stiffen up while the baking powder ignites. Then use a 1/3 cup greased with extra coconut oil and scoop out the batter onto parchment papered muffin tin papers.  You should get 12 large muffins from this recipe or at least 24 minis. Then use some melted coconut oil to brush over the tops before baking, and sprinkle with a mixture of pumpkin seeds and chocolate chips on top of the muffins. You may need to press them down gently to stick to all the tops well. Cover it as much or as little as you like. Bake in a 350 degree oven for 20-25 minutes depending on your oven. Check the middles to make sure they are baked through and then serve after 15 minutes of cooling.

Coconut Cream Caramel Sauce

This is the recipe for all those searching for a dairy-free option for a caramel sauce for apples this fall. It is very caramelly and almost the perfect substitute for the real deal. Also, very very easy to make and not a super big mess or many utensils. I first made this as an ice cream topping for sundaes, but really it is great this time of year for all those amazing fresh and tangy apples. A perfect dip, or if you get really brave to cover up the whole apple too!
People always say that making caramel is actually really easy- and it is- (unless for some reason you make it and it burns and it sticks to everything in your kitchen and turns into a huge mess!) haha! This recipe is subbing in coconut milk for whole cream and coconut palm sugars in place of table sugar. The honey and coconut oil help it all meld together well and viola it's caramel! For all your caramel needs ;) I guarantee that if you make this- you will find lots of things to drizzle on and enjoy. I'm just saying... that's been the case around here. Coconut Cream Caramel Sauce Recipe
{gluten, dairy, egg, nut, seed and refined-sugars-free}

1 cup of coconut cream*
1 cup of coconut palm sugar
1/4 cup of honey
1/4 cup of coconut oil
pinch of sea salt


*(use 1 can of coconut milk. scoop out the cream and discard/reuse the water)

In a small saucepan, put all of the above ingredients and whisk together until fully melted together. Let cook on low to medium heat for 15-20 minutes until it turns into a dark amber brown color. It will be VERY HOT and could burn your skin, so make sure you use a whisk to whip together well and it will be bubbling and foaming so just be careful of your hands and face while on the heat. Let it cool down after it turns into a thick caramel mixture and then when it is slightly cooled you can pour into a pint sized jar and let it continue to cool until warm and then you can serve over ice cream or with apples or in your coffee :)

It will thicken and harden up as it completely cools. You can store this in the fridge for a few weeks, but you will need to place the jar of caramel in a bowl of boiling water to get it softened again. 

This will work for caramel apples and toppings, it is just a bit more messy because it doesn't thicken exactly the same as dairy caramel. But if you put the covered apple in the fridge for a bit it would harden up nicely and could even get some other toppings on it too. 


Date-Puree-Caramel-Dip
If you are looking for the date-puree caramel-like sauce. Then I alluded to it in this recipe, my Caramel Apple Date Muffins because I mention that the date puree is a very sweet and tasty alternative to real dairy caramel. Also- it is basically just dates (maybe with a pinch of sea salt) and so there is no sugars of any kind- just the natural sugars from the dates alone.
Date Puree Caramel Dip Recipe
1 cup of pitted dates
1 cup of boiling water
pinch of sea salt

In a high powered blender, put in the dates and the boiling water and pinch of salt and then blend on high until creamy and ready for licking ;) It is that easy! This dip is best in my opinion right from the blender when it is still creamy and warm and fabulous- but you can also store this in the fridge for weeks to add to baked goods, porridge, and stir up again to be ready to dip apples or other favorite cookies, crackers or fruit in. It's a fabulous way to live- once you make date puree your life is just about complete ;) Make it in large batches (4 cups dates/ 4 cups water) and you will have plenty to spare. 

OPTION #2:
You can use 1 cup of the date puree, with 1 cup of fresh nut or seed butter whipped together with a pinch of sea salt and you have a PERFECT sweet and salty apple dip as well. I have used almond butter, peanut butter, sunflower/pumpkin seed butter all in the past, but you could use whatever you can tolerate or enjoy and it adds in the protein for the snack as well to fully be fueled up too!
